Easter Apple Cake – Gluten Free and Dairy Free

I love the versatility of white cake, it is one of my favorite things in the world!  Having food allergies I wanted to make something that both myself and W could eat, both gluten free and dairy free.  The brown sugar cooks in to the apples making a super yummy way to end a meal.

Pamela’s baking mix is one of my favorite options for gluten free/dairy free baking.  Using this cake mix makes it an easy and delicious cake, perfect for Easter dinner.

Ingredients

-2 large apples chopped (Sis did this for me!) 

-1/2 Cup Dairy Free butter

-3/4 Cup Brown Sugar

-1 Package Pamela’s Vanilla Cake Mix

-3 eggs

-1/2 Cup Trader Joe’s Big and Chunky Apple Sauce

-2/3 Cup Apple Juice (or cider)

-1 teaspoon vanilla extract

-1 tablespoon ground cinnamon

-1 teaspoon ground nutmeg

 

Directions:

Preheat oven to 325 degrees.

Grease bottom and sides of 8 inch spring form pan.  Place the butter in pan and put in over to melt butter.  Remove from oven.

Sprinkle brown sugar in melted butter, pressing in to the bottom of the pan.  Cover chopped apples over brown sugar.

Mix remaining ingredients and pour over apples.  Bake for 45 minutes or until the cake is set.

Let the cake cool for 10 – 15 minutes, and then remove pan ring and invert cake on to a flat surface.
